French Toast Oatmeal

There is something very satisfying about a nice warm cup of sweet oatmeal in the morning. It would have been even better if my little crock pot was clean and used that to cook it overnight. Make note to self- stop forgetting and clean it out tonight!!! If I played my cards right, I would have risen to the smell of maple syrup, plump raisins, vanilla and cinnamon. No complaints here- yummy breakfast was still served in less than 10 minutes.

This recipe serves one so please use some math to serve the masses.

French Toast Oatmeal

1/2 cup Quaker Old Fashioned Oatmeal
1/4 cup skim or 1% milk
1/2 cup water
3 teaspoons maple syrup, separated
1 1/2 tablespoons raisins, separated
1/4 teaspoon vanilla extract
A few shakes cinnamon
A few dashes Kosher salt

In a small pot, combine oatmeal, milk, water, 2 teaspoons maple syrup, 1 tablespoon raisins, vanilla extract, cinnamon, and salt. Heat over medium until it reaches your preferred consistency, stirring occasionally.

Pour oatmeal into a bowl. Top with remaining raisins. Drizzle with remaining teaspoon syrup.
